Abstract

The researchers have conducted research that small round edible mushrooms from Jember contain amino acid, metal and ability to absorb free radical from DPPH (1,l Diphenil- 2Picryl Hidrail). The research shown that small round edible mushrooms contain of 16 amino acid i.e. Aspartat 1,56%, Threonin 0,75%, Senn 0,68%, Glutamin 2,41%, Glysin 0,75%, Alanin 0,80%, Cystin 0,63%, Valin 0,90%, Isoleusin 1,19%, Leusin 1,10%, Thyrosin 0,15%, Phenilalanin 0,48%, Lysin 0,53%, Histidin 0,15%, Arginin 0,64% and Prolin 0,76%. Moreover, small round edible mushrooms also contain of Ca 0,05%, Cu ),004%, Fe 0,008%, K 5,64%, Mg 0,125%, Na 0,045%, P 0,002%, Pb 0,004% and Zn 0,011%, and they are positively absorb DPPH free radical. Finally, the researchers conclude that small round edible mushrooms is potential to be nutritious supplement.
