Abstract
This study examines the impact of UV light treatment and different types of packaging on the quality of virgin coconut oil (VCO) during storage. The research involved two types of UV light with different wavelengths (253.7 and 352 nm) and intensities (325 and 396 lux). Various packaging bottles such as HDPE, PP, and PET were used. The storage period was accelerated under high-intensity light exposure at room temperature for 4-5 weeks, with VCO quality analysis conducted weekly. Quality parameters observed included physicochemical properties such as moisture content (MC), free fatty acids (FFA), acid number (AV), iodine number (IV), peroxide number (PV), and saponification number (SV). The analysis results indicated that higher light intensity led to lower VCO quality, with an increase in quality parameters (MC, FFA, AV, SV) of the key indicators of decreased quality. Additionally, UV C (253.7 nm) showed greater degradation of VCO quality compared to UV A (352 nm). The study concluded that both the type of UV light and packaging significantly influence the storage stability of virgin coconut oil. Prolonged storage time also negatively impacted VCO quality. Furthermore, the type of packaging played a crucial role, with HDPE packaging being more effective in maintaining VCO quality.
