Abstract
This bibliometric study analyzes research topics and trends in coffee science using the Science Citation Index Expanded (SCI-EXPANDED) on the Web of Science. It examines 4,169 articles published from 1991 to 2023, focusing on influential publications, citation trends, and evolving research themes. The data highlight that Brazil, the United States, and European countries lead in coffee research output. Key institutions such as the Federal University of Lavras (UFLA), Universidade Estadual de Campinas (Unicamp), Spanish National Research Council (CSIC), and Nestle Research Centre (NRC) are major contributors. The study identifies the top ten most cited publications, which impact analytical methodologies, health benefits research, and industrial applications of coffee by-products. Citation trends show varied patterns, with some articles maintaining or increasing citations over time, while others have seen declines. Analysis of author keywords across three periods (1991-2001, 2002-2012, and 2013-2023) reveals shifting research interests toward antioxidants, phenolic compounds, and coffee by-products, reflecting an increased interest in the chemical properties of coffee and its potential uses, especially regarding sustainability and health benefits. The findings indicate the role of international collaboration and suggest opportunities to address challenges in coffee science through targeted future research.
